Peanut Butter Balls

Peanut Butter Balls

This recipe is a quick and easy no bake dessert made with peanut butter. This Recipe can be made with or without Chocolate.


Without a coating of Chocolate 

Coated With Chocolate & Sprinkles 

Ingredients:

1 c. Jif Creamy Peanut Butter
1/4 c. Butter (Melted)
2 Tbsp. Brown Sugar
2 tsp. Vanilla
Dash of salt
2 c. Powered Sugar
10-12oz. Chocolate or Chocolate Chips(I used 1/2 semi sweet baking chocolate and 1/2 milk chocolate (optional)Or 12oz Candy Melts Light Chocolate

Line a cookie sheet with parchment paper.
Stir together peanut butter, melted butter, brown sugar, vanilla, dash of salt. just to combine.
Gradually adding the powered sugar.
Form into balls with 2 teaspoons or use a small cookie scoop.
Put onto Cookie sheet and put in Freezer for 45-60 minutes
line another cookie sheet or tray with parchment paper 

Melt Chocolate by microwave or double boiler method .Or a Candy melting pot 
Using a fork,dip each ball into melted chocolate to cover completely .Gently tap the fork to drip the excess chocolate off . Place on cookie sheet put in refrigerator until chocolate sets up.

Creamy Peppermint Coffee

Creamy Peppermint Coffee

This recipe was from my book of recipes

6 oz. Hot ,fresh-brewed Coffee
1 generous scoop of peppermint ice cream

Directions:

Pour coffee into large mug, add ice cream.
Stir until slightly melted
For an extra special treat, top with whipped cream and add a cinnamon stick with sprinkle with cocoa powder, ground nutmeg and ground cinnamon.

Ingredients:


1 1/2 ounces white rum, preferably Bacardi Light
  • 1 1/2 ounces Kahlua
  • 2 scoops vanilla  ice cream

Directions:

  1. Add all ingredients to a blender, add two ice cubes and blend until smooth.
  2. Pour into a rocks glass. 
  3. 1 Serving

Pumpkin Bread

How about a nice warm piece of pumpkin bread with some butter or a cream cheese frosting.

Pumpkin Bread
Makes 2 loaves

1 1/2 c. pumpkin(1 can)
1/2 c. shortening
2 c. sugar
4 eggs (1 at a time)
2 c. flour
2 tsp. baking power
2 tsp. cinnamon
1 tsp. salt
2 tsp. baking soda
1/2 c. chopped walnuts or pecans
1/2 c. gold raisins (optional)

Grease and flour a loaf pan,
Mix everything together
Bake at 350 oven for 1 1/4hours

Roasted Garlic Soup

Roasted Garlic Soup 





4  whole heads of garlic             
3 tablespoons olive oil                         
6 tablespoons unsalted butter                         
2 medium onions, chopped                           
Salt and pepper                        
2 tablespoons chopped fresh thyme                         
1/4 cup all-purpose flour     
8 cups low-sodium chicken broth         
1 cup heavy cream, warmed                   
2 tablespoons chopped fresh parsley                     




 How to Make It                

 Step 1
 Preheat oven to 375°F; line a small baking sheet with foil.
 Use a sharp knife to cut about 1/4 inch off top of each
 garlic head. Place garlic cut side up on baking sheet and
 drizzle olive oil over heads. Roast garlic until softened,
 about 45 minutes. Allow to cool slightly. When cool enough
 to handle, squeeze soft cooked pulp from each clove into a
 small bowl. (You should have about 1/2 cup soft garlic
pulp.)

Step 2
 Melt butter in a large pot over medium-high heat. Add onions
 and 1 tsp. each salt and pepper and cook, stirring often,
 until onions have softened, about 4 minutes. Stir in thyme
 and reserved garlic. Sprinkle in flour. Cook for about 1
 minute, stirring, to incorporate flour. Pour in chicken
 broth, increase heat to high and bring to a boil. Boil
 rapidly, stirring often, until slightly thickened about 10
 minutes.


Step 3
 Working in batches, puree soup in a food processor or
 blender. Return to pot and bring to a simmer over medium
 heat. Add cream, season with salt and pepper and sprinkle
 with parsley.

Indian Pudding



Indian Pudding

1/4 c. Cornmeal
2 c. Hot Milk
1/4 c. Sugar
1/8 tsp. Baking Soda
1/2 tsp. Salt
1/2 tsp. Ground Ginger
1/4 tsp. Cinnamon
1/4 c. Molasses
1 c. Cold Milk

Whipped Topping
Nutmeg

Stir cornmeal, a little at a time, into the hot milk and cook over low heat or in the top of a double boiler, stirring constantly, for 15 minutes until thick. Remove from heat. Mix together sugar , baking soda, salt, ginger and cinnamon. Stir into cornmeal mixture. Add molasses and cold milk, mixing thoroughly. Pour into a 1 -quart casserole dish and bake at 275F for 2 hours. Serve warm with whipped cream and a light sprinkle of nutmeg.

I remember going on walks with my grandmother and she picked one and told me to tastes it. To me it tasted like wintergreen or chewing gum .

its actual "teaberries", are edible, The leaves and branches make a fine herbal tea, through normal drying and infusion process. For the leaves to yield significant amounts of their essential oil, they need to be fermented for at least three day .
With a taste of mildly sweet wintergreen similar to the flavors

Granola Bars

Granola Bars


Here's is a recipe for a snack

1/2 c . Reduced-Fat Peanut Butter or Jiffy
1/3 c. Honey
2 Tbsp. Canola Oil
1 Egg
1 tsp. Vanilla Extract
3 1/2 c. Old-Fashioned Oats
1/2 c. Brown Sugar
3/4 tsp. Salt
1/3 c. Peanut Butter Chips
1/3 c. Mini Chocolate Chips

In a large bowl, beat peanut butter, honey, egg, oil and vanilla until blended. Combine oats, brown sugar, and salt; add the peanut butter mixture and mix well. Stir in chips(batter will be sticky).

Transfer to baking dish coated with cooking spray. Bake at 350 degrees for 15 minutes until edges are lightly browned. Cool completely. Cut into bars
Enjoy!!

420* Just replace regular honey to magical honey and Canola Oil for magical  Coconut Oil

Crock Pot Cranberry Sauce

If you have leftovers this goes good in  muffins or cranberry bread


1/2 c. Orange Juice
1/2 c. Water
1/2 c. Brown Sugar
1/2 c. Sugar
1/4 tsp. Cinnamon
1 12oz. Fresh Cranberries

Put all ingredient in a crock pot ,set crock pot on High for 3 hours. When done take a potato masher to them.

Orange Tea Cake

I made this recipe.  Its very good


Orange Tea Cake

1 (16oz) package pound cake mix
1/2 c. plus 2 Tbsp. orange juice, Divided
2 egg whites
1/4 c. milk
1 (15oz)can of Mandarin orange segments in light syrup, drained
1/4 c. powered sugar
Grated peel of 1 orange

  • Preheat oven 350F.Grease 9 inch Bundt pan
  • Beat cake mix, 1/2 c. orange juice , eggs and milk in a large bowl with a electric mixer at medium speed 2 minutes or until light and fluffy. Gently fold in orange segments. Pour batter into prepared pan.
  • Bake 45 minutes or until golden brown and toothpick inserted near center comes out clean. Cool cake on a wire rack 15 minutes, invest cake onto wire rack and cool completely.
  • Combine sugar, orange peel and remaining 2 Tbsp. orange juice in a small bowl, stir until smooth. Drizzle glaze over cake. Allow glaze to set about 5 minutes before serving..
  • Makes 16 servings

Bread & Butter Pickles

Bread & Butter Pickles

This recipe from my grandmother recipe book back on Sept 23, 1969

4 quarts slice (16) cucumbers
6 med onions
1 green pepper
1 red pepper
1/3 c. salt
3 c. vinegar
3 cloves of garlic
4 c. sugar
1 1/2 tsp. turmeric
1 1/2 tsp. celery seeds
1 1/2 tsp. mustard seed

Combine cucumbers , peppers, onions and whole garlic cloves, sprinkle with salt. Let stand in ice for 3 hours then drain . Mix together vinegar ,sugar and spices then pour over cucumbers and place over low fire, heat to scalding but not boil. Stir often with a wooden spoon. Seal in hot jars.

6 quarts ripe cucumbers, peeled and cubed
4 small onions, finely chopped
2 red sweet peppers, finely chopped
1 1/3 Tbsp. turmeric
1 1/2 Tbsp. mustard seed
3 Tbsp. salt
2 Tbsp. celery seed
6 c. sugar
1 quart vinegar

Mix ingredients. Cook until tender and crisp.

Tater Tot Casserole

Tater Tot Casserole

1 can cream of mushroom soup
1 bag tater tots
shredded cheese
1 lb of ground hamburger meat
 diced onions if you want
serves: 6 or 7



 *Brown hamburger meat. Add cream of mushroom soup and stir together continuously. Let simmer on low heat for 15 minutes. Place mixture in the bottom of a casserole dish . Lay tater tots neatly on top of the mixture. Place in oven on 350' and let the tater tots brown. Sprinkle with cheese; melt it in the oven and ENJOY.
 * I've  made this recipe about 6 times already and I've used 1 can of Cream of Mushroom Soup to 1 can of Cream of Chicken Soup and more hamburger also ..

Blueberry Cake Recipe

Happy National Blueberry Day

This is my grandmothers recipe

 Blueberry Cake

2 eggs separated
1 c. Sugar
1/2 c. Shortening
1/4 tsp. Salt
1 tsp. Vanilla
1 1/2 c. Flour + 1 Tbs.Flour
1 tsp. Baking Powder
1/3 c. Milk
1 1/2 c. Fresh Blueberries

Separate eggs, beat 2 egg whites until stiff fold in about 1/4 c. sugar. Sit aside
Cream shortening, add salt and vanilla to this. Add remaining 3/4 c. sugar, add 2 egg yolks and beat mixture until light and creamy.
Sift all purpose flour, measure 1 1/2 c. and sift together 1 tsp. baking powder.
Add alternately to creamed mixture with 1/3 c. milk
Fold in beaten egg whites and sugar.
Measure 1 1/2 c. blueberries, sprinkle 1 Tbs. flour over them and mix lightly, Fold into cake mixture . Turn into well-greased 8x8 pan. Sprinkle  a small amount of sugar on top of mixture.
Bake at 350 for about 45mins..

* Don't forget to put sugar on top of cake!!

Grilled Pork Tenderloin

Grilled Pork Tenderloin

1 1/2 - 2 lb. pork tenderloin
 2 T. olive oil
 2 T. balsamic vinegar
 1 tsp. soy sauce
 4 cloves garlic, chopped
 1/2 tsp. black pepper

Whisk together the olive oil, vinegar, soy sauce, garlic and pepper. Place the tenderloin in a Ziploc bag and pour in the marinade. Marinate for at least 2-3 hours, the longer the better. Fire up the grill, you want the heat to be at least 400 degrees. Remove the pork loin and place on the grill, cooking for approx. 30-35 minutes (depends on the thickness of your pork loin) and turning the meat to char/grill all sides. Using a meat thermometer check that the internal temp. is 140 degrees before removing from the grill. Allow the meat to rest 10 minutes before slicing.

Breakfast for dinner anybody

Homemade Pancake Recipe 

3/4 cup milk
2 tablespoons white vinegar (see note)
1 cup all purpose flour
2 tablespoons white sugar (I used 3)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
2 tablespoons melted butter
1 teaspoon vanilla
Combine the milk and vinegar in a small bowl for 10 minutes to "sour". This is an important step and it is called "soured milk" which is much different that sour milk. I guarantee you will NOT taste the vinegar in the final product. Set aside.
Combine the dry ingredients in a bowl. In a smaller bowl, whisk the soured milk, egg, vanilla and melted butter together. Pour into the dry ingredients and whisk until most of the lumps are gone, but DO NOT OVER BEAT!!
The batter will be thick, don't add any more liquid. LET THE BATTER SIT UNDISTURBED FOR TEN MINUTES!!
After 10 minutes, you will see bubbles in the batter, very important DO NOT STIR AGAIN.
GENTLY dip out (don't pour out) 1/2 cup of batter and place it on a buttered grill or frying pan. Cook until bubbles appear on the surface of the pancake and then flip with a spatula and brown the other side.


*Note Add your favorite Fruit ie: Blueberries

Maple Smokies

#2 lil smokies
2 Tbs Melted margarine
2 Tbs. Soy Sauce
1/2 c. Dark Maple Syrup

In crockpot,combine all ingredients,Slow cook until all smokies are coated with warm syrup glaze and heated through.Keep warm on low setting.
*To speed things up,cook in frying pan and then transfer to crockpot to keep warm.

Zucchini Cups

Zucchini Cups 


nonstick cooking spray
2 medium zucchinis, plus 1/3 cup (50 grams) diced
6 large eggs
⅓ cup  diced tomato
⅓ cup  mushroom, diced
½ cup  milk
salt, to taste
pepper, to taste
½ cup  crumbled feta cheese


Preparation:
Preheat the oven to 400°F (200°C). Grease a 12-cup muffin tin with nonstick spray.
Trim the ends from the zucchini, then slice lengthwise with a vegetable peeler.
Line the muffin cups with the zucchini strips.
In a large bowl, whisk together eggs, tomato, diced zucchini, mushroom, milk, salt, and pepper.
Add a bit of crumbled feta to each zucchini cup.
Divide the egg mixture evenly among the cups.
Bake for 18 minutes, until the edges are slightly browned.
Enjoy!

Ingredients:

1 Bag M & Ms
1 Bag M & Ms w/Peanut
1 Bag Reeses Pieces
1 Large can of Peanuts
1 Box of Cheerioes
1 Container of Raisins
1 Box of Crispix cereal
1 Bag of Mini Marshmallows

Equipment:

1 small Trash Bag
1 Box Ziploc sandwhich bags

Instructions:

Place all of the ingredients into the trash bag. Shake the bag. Scoop portions into individual sandwhich bags.

Ingredients:

Banana, chocolate, marshmallows
Equipment
Foil






Instructions:

Put your banana in the foil,(((NOT PEELED)))
cut a slit from end to end, add chocolate and marshmallows cover tightly with foil and let cook over fire for about 10-15, I also like adding peanut butter, nuts, etc.
Mix it up, try what you like, its a great treat.

Big Cat Act

I am a cat lover big cats and small cats, I don't agree with keeping big cats and other animals in the circus. It’s not right to force them to perform in environment that isn’t meant for these type  of animals  or to justify for someone else happiness isn’t always bests for these animals. Todays world we hear of Abuse its a strong word is a real one and really happens, Even to Big cats ,once you are done with whipping them, beating them,. You leave them to not able to live on there own in the wild or take care of there self, or seeking out what to do with circus cats once they are old or unable to perform in the way you like, Its like tossing away a piece of trash with animals on the side of the road. These cats have feeling too. They cry like we do in there own way. They bleed like we do, they morn like we do, they feel love when there life isn’t on a threatened, They have there own personalities. So many cats are getting abused and its in the news daily if you could show that Not using Big Cat in your acts will be one step in Stopping the abuse.  Please Make the call of the wild today to stop the abuse.

1/2 c. Water
 Put raw rice on bottom of dish top with rest of the stuff. Bake at 350 for 2 1/2hrs

All About Bear The Cat

We found Bear and his mother with is two other siblings in our garage soon after I had to put my cat to rests. We saw bear's mother hanging out in our driveway, she was friendly and pregnant living in underneath an old computer stands. she was thin, we are thinking she was someone's cat that got lost. In our neighborhood on 4th of July there was a really bad thunderstorm, high winds, and lighting. We put a dish of food and water out for her. she let us pat her. we followed her into the garage and found a pink leopard blanket and set it up for mommy kitty. we noticed her and her kittens was born and little fur balls...We couldn't take in the mother and 2 siblings at this time, we put mommy and babies in the carrier and brought them to our local Animal Shelter on 9-6-2013.We told the shelter that we would like to have the black kitten when he comes available. The shelter tested him for FeLV/FIV Combo he tested Negative. We adopted Bear on Oct 11, 2013.The adoption fee was less because it was Black Cat month at our local shelter was at all in Oct. Halloween Kitty.

 Likes are Cat nip bag, mouse with a bell in it. Little pieces of cheese now and again. Likes bubble wrap, and Pipe Cleaners. He very section who he lets pat him. Likes to bunt heads with me.
Dislikes are any type of dry and canned cat food that isn't Friskies, Hairballs, Spray bottle and said NO
 And when the weather changes, he gets frisky.
Bear was tested on 9-9-13 for Felv/Fiv Neg.
